John Cox, Director of Public Affairs, Kentucky Chamber
A native of Lexington, John Cox joined the Kentucky Chamber of Commerce in December 2019 as a manager of public affairs. John currently heads the Kentucky Chamber’s Healthcare, Infrastructure, and Agriculture/Equine Policy Councils. Prior to joining the Kentucky Chamber, John previously served in the role of communications director for the Kentucky Tourism, Arts, and Heritage Cabinet (2018-2019) and for the Kentucky Senate Majority Caucus (2014-2018).

Jay Inman, Shareholder, Littler Mendelson P.C.
Jay provides solutions for employers of all sizes navigating today’s complex business world. He pairs experience tested, broad knowledge of labor and employment law with deep understanding of clients’ businesses, challenges, and opportunities. His practice includes representing employers in administrative matters and litigation brought by individuals and government agencies, as well as advising employers on employment-related issues, policies and procedures.

Jay serves as a go-to on drafting and enforcement of arbitration agreements, investigations in the workplace, and complex and appellate litigation. He has obtained favorable results for clients in federal and state courts and before administrative agencies on matters involving Title VII of the Civil Rights Act, the Americans with Disabilities Act, (and Amendments Act), Employee Polygraph Protection Act, Fair Labor Standards Act, Family and Medical Leave Act, Federal Arbitration Act, Kentucky Civil Rights Act, Kentucky Equal Opportunities Act, Kentucky Patient Safety Act, Kentucky Wage and Hour Act, and Kentucky Workers’ Compensation Act, as well as common-law matters including contracts, defamation, business relations, unfair competition, and trade secrets.

Jay frequently writes for publication and gives presentations regarding appellate practice, arbitration, class actions, employment law in the healthcare and manufacturing industries, federal courts, and investigations in the workplace.

Prior to joining Littler, Jay served as a law clerk for Hon. Eugene E. Siler, Jr. of the U.S. Court of Appeals for the Sixth Circuit, and for Hon. Robert E. Wier, Magistrate Judge for the U.S. District Court for the Eastern District of Kentucky. He also served as a judicial intern for Justice Gary Wade of the Tennessee Supreme Court during law school.

Michael LaCourse, Associate, Littler Mendelson P.C.
Michael focuses his practice on labor and employment matters.

Prior to joining Littler, he clerked for the Hon. Lanny King, U.S. Magistrate Judge for the U.S. District Court for the Western District of Kentucky, where he gained valuable experience in federal court. Michael has experience with a Lexington firm as an associate in its Torts and Insurance as well as its Business Litigation practice groups. He handled discovery, took and defended depositions, drafted and argued dispositive motions in a variety of civil litigation cases. Previously, he worked for an insurance defense firm, where took and defended depositions, handled discovery, drafted and argued successful dispositive motions, drafted appellate briefs, and drafted coverage opinions. The matters Michael covered included insurance defense tort cases, bad faith litigation, and insurance coverage issues. He also obtained as the sole litigator a favorable verdict on behalf of a major national insurance company in a small claims trial.

After graduating from law school, Michael clerked for the Hon. Paul F. Isaacs, who at the time was the Chief Circuit Judge for Kentucky’s 14th Circuit. There, he was able to gain experience in all areas of civil and criminal litigation in Kentucky’s highest level trial court.

LaToi D. Mayo, Shareholder and Co-Chair, Healthcare Industry Group, Littler Mendelson P.C.
LaToi has advised, counseled and defended employers in regard to labor and employment matters for over 18 years. Most recently, LaToi has developed extensive skills in enforcing employment related arbitration agreements, defending and managing wage and hour class actions and advising employers on state and federal wage and hour compliance issues. She also routinely assists employers with respect to diversity, discrimination, and leave issues. She works frequently with hospitality and service-related groups, manufacturers, health care facilities, financial institutions and local city governments.

LaToi routinely presents at seminars focusing on labor and employment topics for a variety of professional organizations in Kentucky. She also conducts training for managers, supervisors and the general workforce and provides labor and employment compliance counseling.

Jessica Wimsatt, Associate, Littler Mendelson P.C.
Jessica has exclusively devoted her career to labor and employment law since 2015.

Prior to joining Littler, Jessica represented plaintiffs in a wide range of labor and employment and civil rights matters throughout the Commonwealth, including accommodations, exemption classifications, and litigation arising out of alleged discrimination, harassment, and retaliation. This included causes of action in Title VII, Kentucky Civil Rights Act (KCRA), Americans with Disabilities Act (ADA), Section 504 of the Rehabilitation Act (Rehab Act), Age Discrimination in Employment Act (ADEA), and the Family and Medical Leave Act (FMLA).

She has experience with the Fair Labor Standards Act (FLSA) and the Kentucky Wage and Hour Act, including employee classification and wage and hour disputes. Jessica's background also includes negligent hiring and supervision claims. She has advised clients on drug-testing policies, drafted independent contractor agreements, and reviewed handbook provisions.

Prior to law school, Jessica worked in the distribution and logistics industry for seven years. This practical workplace experience, combined with her understanding of the plaintiff’s bar, make her uniquely positioned to effectively guide employers through litigation while providing sound advice to mitigate risk. Not only does she defend employers against claims of discrimination, harassment, and retaliation, but also, she partners with Executives and Human Resources to execute workplace investigations. Jessica has also gained extensive experience in workplace safety, including federal and state Occupational Safety and Health plans.
